How to Clean Chicken

Cleaning chicken is very important and require more than just paper towels and a simple rinse of cold water. In the Haitian culture, before you can go anywhere near the stove, one must first learn how to clean chicken and learn the importance of cleaning chicken.


Ingredients

2 lbs of raw chicken
3 limes (sliced in half, juiced) or
1/2 cup of vinegar
3 cups of boil hot water
1 large bowl




Cleaning the chicken includes one removing skin (optional), excess and visible fat and any remaining chicken feathers, if any. Some people like to remove the heal of the chicken, yes the back heal, which is located right behind the drumstick. while others do not really care about it being there. This is a great method to prevent any bacteria such as salmonella.



Once the fat has been removed, you can cut slices into the thighs, breast and drumsticks to allow the marinade to penetrate inside the meat. Take sliced limes and scrub the meat, once completed place individual pieces into a bowl. Take hot boiling water and pour into bowl and let sit for 30-45 seconds, making sure that every piece of meat is drowned by the water. Drain and rinse with cool water, examining and ensuring that there is no excess fat remaining. Drizzle with lime juice and season.

  1. I purchased a 4 pound hen and after unwrapping it I find that it is full of feather remains. How do I get those things out?

  2. I bought some chicken wings the other day and had the same issue, but you can pull it out with the knife. Just hold the feather with the back of the knife and pull it out. It's quick and easy.

  3. also if you have little plim (Sp) just hold it over an open flame it'll burn it off

  4. Cleaning chicken is completely unnecessary. It does nothing. Limes/lemon does NOT remove bacteria. The only way to remove bacteria is to cook the chicken

  5. Hi Sandra. You may be right but limes, sour oranges and vinegar are used as a disinfectant for the meat prior to cooking the meat.

    In terms of raw meat, you really don't know how long it's been seating on the shelf since being slaughtered. It's raw flesh, and taking an extra step to ensure bacteria has been removed doesn't bother me.

  6. Not to mention, the acid in the limes, sour oranges and vinegar breaks the meat down making it easier for spices to flavor the meat.

    1. Very True Mrs. Barbara. My mom always told me that the limes and sour orange are to break the meat down. Now thats not to say that limes cannot kill salminella bacteria, because it is a proven fact that it can, solely because the pH levels are raised. It doeant remove all, but somr. Its also proven that Vinegar can also kill bacteria. Also, most people do not cook chicken long enough so that the internal temp removes the salmonella from the chicken. I agree with you and dont mind taking a little extra precaution.

Hello im new to this site my husband is haitian and i am puerto rican i truly love haitian food and super glad i found this blog is there anyway you could do a 101 on how to devain chicken thighs and drumsticks? My mother in law does it all the time with such ease but i cant get the hang of it

    1. You can run your thumb down the bone of the chicken thigh to get the bone out and this helps get the veins out. Getting the bone out makes it a better piece of meat.

  8. In the pictures it seems like you removed the all the skin from the chicken, is that what you mean by "removing the heal of the chicken"?

  9. About 42 yrs ago when I was 18, my aunt's babysitter, Emma from Haiti, made a dish consisting of chicken, onions, olive oil and vinegar. I've never been abke to find this recipe. Can you help?
